General Information: The majority of our staff are employed from February until early November which is our main season but we welcome CV's all year round as we recruit throughout the year for both seasonal and permanent positions throughout the Hotel. Please note that it is our policy to employ people over 18 years of age, applications from couples are welcome. We request that any applicant applying for work in the kitchen should hold the relevant food hygiene certificates or be prepared to take certification on the job. We strive to offer other on the job training which results in certification.

St Mary’s is one of the 5 inhabited islands which together with a further 200 or so smaller uninhabited islands make up the Isles of Scilly, lying 28 miles south west off the coast of Cornwall. The other 4 inhabited islands are, St Martins, St Agnes, Tresco and Bryher

Staff accommodation is available if needed; details of accommodation and pay are available on application.


FRONT OF HOUSE

The entrance to St Mary’s Hall Hotel is like no other on Scilly, its grandeur transports you back to a time where service and quality were the order of the day. We are looking for front of house staff who can offer a level of service that facilitates our guests in making the most of both the Hotel and the Isles of Scilly.

RECEPTIONIST

We are looking for an enthusiastic person to work on our reception desk, which is the heart of our business and is a constant hive of activity. Previous experience, whilst being a benefit is not essential, as full training, encouragement & support will be given.

Your brief is to:-

· Ensure that guests have the highest level of customer service
· That telephone calls are answered within 4 rings and all calls are dealt with effectively
· To take bookings
· Administer room accounts
· To take responsibility for all other reception duties as required.

Your Skills:-
· Able to demonstrate an ability with IT office systems
· Have a head for figures and be able to handle payments
· Be flexible and adaptable
· To be able to communicate with customers, staff and service providers.
· Have a drive for success

BAR AND RESTAURANT

We believe in real food. We believe we have a responsibility to deliver food that seasonal, locally grown, well cooked and well presented. We believe in creating a dining experience which is beyond the norm. We are looking for charismatic staff for the season on 2010. The job will require you to work up to 48 hours a week over 6 days. You will be required to work evenings and weekends as befits the rota, holidays are based on 28 days a year pro rata.

Our newly opened bar and restaurant will be offering something different to elsewhere on Scilly and we have the following positions available.

BAR AND RESTAURANT MANAGER

We are looking for someone who is committed to the development of a newly refurbished restaurant, someone who believes in service and is able to deliver effective staff training; the role attracts a competitive salary dependant on ability and experience. Your brief is :-

· To implement the Hotel food and beverage strategy as agreed with the manager

· To ensure the delivery of a high standard or service

· To offer clear leadership to all bar and restaurant staff

· To control stock levels within the bar and restaurant

· To ensure that staff have relevant training and development

· To ensure the constant updating of risk assessments and health and safety issues

· To be able to create team spirit To train the restaurant and bar supervisors in product delivery

· To train the restaurant and bar supervisors and waiting staff in product delivery

· To report directly to the General Manager

Your skills:-

· To have an eye for detail

· To be a team player

· To have excellent communication skills with guests, all staff, the manager and the chefs

· To be presentable and friendly

This job is seasonal but may develop into a full time position, salary negotiable, accommodation and all meals are provided.

 

BAR SUPERVISOR

Our bar supervisor will be responsible for the bar and report to the restaurant manager on a daily basis.
This job is seasonal, accommodation and all meals are provided, wage is dependant on experience and ability.

Your brief is:-

· To organise a clean and efficient bar

· To carry out the duties of the bar and restaurant manager during their time off on a rota basis

· To understand the wine list and be able to deliver good product knowledge

· To implement the food and beverage strategy as set out by management

· To ensure that all guest accounts are billed correctly

· To ensure that all liquor sales are carried out in accordance to the law

· To ensure that stock levels are appropriate as agreed with management

· To act as part of a team

Your skills:-

· To have had previous experience working in this environment

· To be friendly bright and cheerful when dealing with customers at all times

· To be energetic and able to work under pressure

· To be able to work with others

· To be willing to work hard to create a return customer base by virtue of your character

· To be numerate and have a good understanding of point of sale procedures

RESTAURANT SUPERVISOR

Our restaurant supervisor will be required to work in close relationship to the bar and restaurant manager, they will be responsible for the day to day implementation of the food and beverage strategy as set out by management.
This job is seasonal, accommodation and all meals are provided, wage is dependant on experience and ability.
Your brief will be :-

· To report to the bar and restaurant manager

· To train waiting staff and ensure that they understand the menu and wine list

· To carry the duties of the bar and restaurant manager during their off duty time on a rota basis

· To be willing to work towards creating a return customer base by good and friendly service

· To ensure a clean safe working environment for staff and guests

· To ensure service of the highest quality

· To be able to organise the daily table plans

· To work as part of a team

WAITING ON AND BAR STAFF

We require our waiting and bar staff to work closely as a team with the other members of the restaurant and bar staff.
These jobs are seasonal, accommodation and all meals are provided, wage is dependant on experience and ability.

Your brief will be to:-

· Serve food and beverage to customers and hotel guests

· To work shifts in more then one department as required

· To maintain the standard on cleanliness in the bar and restaurant

· To lay table

· To undergo training as required

· To help maintain our policies with regard to the environment

· To be able to see problems and have the ability to resolve them

KITCHEN

CHEF DE PARTIE 18+ Salary depending on experience

Responsible for the running & organising a section for an AA 1 rosette restaurant, producing a high standard of food which will include, pastry, larder & and sauce with a share of breakfast shifts with the rest of the brigade.

Responsible to the head chef for producing dishes to the highest standards, stock control, stock rotation & maintaining a high level of hygiene, health & safety.

Applicant to have previous experience in similar style kitchen but not essential must be flexible have excellent time keeping, passionate about food, want to learn & advance.

Uniform provided, must provide own footwear suitable for use in within the kitchen

Seasonal contract March 2010-October 2010. 5 days over a maximum 48 week however during peak season may be required to work more.

Holiday pay and share of staff gratuities tronc upon completion of contract.

An excellent standard of accommodation is provided, staff food is 7 days a week including breakfast lunch & dinner.

COMMIS CHEF 18+ Salary depending on experience

Responsible for assisting the senior chefs in the daily preparation & assisting with service in an AA 1 rosette restaurant, maintaining excellent levels of hygiene & health & safety.

Previous experience in a similar kitchen environment is desirable but not essential. If you are a flexable well motivated individual who would like to progress in your career whilst working as part of a small but experienced brigade then this would be an ideal kitchen to start you on your career.

Applicant must be well presented, have a good attitude & the ability to use own initiative have excellent personal hygiene, self motivated, outgoing, punctual, good communication skills towards guests & colleagues.

Uniform provided, must provide own footwear suitable for use in within the kitchen

Flights to & from St Marys will be paid for by the company depending on completion of contract.

KITCHEN PORTERS

An essential position in the kitchen, we believe that a clean and ordered kitchen is crucial to the running of an efficient kitchen, we require kitchen porters to work a shift pattern as part of the kitchen brigade,

Your brief is:-

· To assist is the smooth running of the kitchen

· To wash up and keep the kitchen spotlessly clean

· To help with deliveries

· To assist with the re-cycling of glass, plastic, metal, paper and waste food

· To help to prepare vegetables as required

· To keep all rubbish areas clean

· To carry out tasks as requested by the chefs

Your skills: -

· To be hard working and be able to work in a hot kitchen

· To have experience in this field (although a willingness to learn will suffice)

· To consider your role to be as important as the chef’s roles

· To be professional

HOUSE KEEPING

As one of the most important areas in the smooth running of the hotel we require housekeeping staff who can spot grime at 1000 paces and deal with it. The housekeeping department is responsible for the overall standard of care delivered to our guests and as such we need professionals who believe that cleanliness is of extreme importance.

HOUSE KEEPING MANAGER

This job is seasonal, accommodation and all meals are provided, wage is dependant on experience and ability.

Your brief is:-

· To ensure that the hotel is clean and tidy at all times

· To work to deliver the house keeping strategy as agreed with the manager

· To deal with staffing levels within the department as appropriate

· To ensure that rooms are cleaned on schedule and to a high standard

· To oversee any other house keeping tasks that may be required from time to time

· To ensure that linen stock levels are appropriate

· To ensure that cleaning products, paper products and bedroom consumables are ordered and that stock levels are appropriate

· To ensure that in conjunction with other department managers the standards are achieved

· To report directly to the General Manager

Your Skills:-

· To be organised

· To have had considerable experience in house keeping

· To be committed to high standards in all area’s of housekeeping and staff management

· To be literate and numerate

· To have a cheerful and friendly disposition

· To be able and willing to take charge of any complaints that may arise and ensure they do not repeat themselves

· To have an extremely good eye for detail

HOUSE KEEPERS
